What is Koshihikari rice?

Koshihikari is one of Japan's best-known short-grain rice styles. When cooked properly, the grains become glossy, tender and gently sticky, so the rice holds together without becoming mushy.

That texture is why Japanese sticky rice is used for everyday meals as well as sushi rice, rice balls, donburi bowls and curry rice. It gives the familiar Japanese restaurant rice feel at home in Sri Lanka.

Why Japanese sticky rice is different

Japanese short-grain rice is naturally more clingy than long-grain rice. It absorbs water differently, cooks into softer grains and keeps a pleasant bite when served with rich sauces, curry, grilled fish, teriyaki, katsu or simple furikake.

It is important to note that Japanese sticky rice for meals is not the same as glutinous rice or mochi rice. Koshihikari-style rice is made for daily eating, sushi and rice bowls.

Best ways to use it

Sushi riceSeason cooked rice with sushi vinegar for rolls, bowls and homemade sushi nights.
OnigiriThe sticky texture helps rice balls hold their shape with tuna mayo, salmon, furikake or pickles.
Donburi bowlsServe with teriyaki chicken, gyudon, katsudon, karaage or tofu toppings.
Japanese curry ricePerfect with Japanese curry blocks, katsu curry and family curry meals.
Bento mealsStays satisfying with eggs, vegetables, sausages, karaage and side dishes.
Fried riceChill cooked rice before frying for Japanese-style chahan with egg and spring onion.

How to cook Japanese short-grain rice

  1. Rinse the rice gently several times until the water becomes less cloudy.
  2. Soak for about 20 to 30 minutes before cooking for a better texture.
  3. Use a rice cooker when possible, or cook covered on low heat after boiling.
  4. Rest the rice for 10 minutes after cooking, then fluff gently with a rice paddle.
  5. For sushi, season while warm. For onigiri or curry rice, serve plain and fresh.
